Whole Boneless Sirloin Roast 
Grass fed and dry aged for 35 days - this is a great joint for roasting or cut into steaks for the barbecue. The succulent sirloin sits just above the fillet with good marbling and a tasty layer of fat ensuring a good balance of flavour and tenderness. We remove the majority of the fat to leave a thin layer of total coverage that bastes the meat during roasting. Best served medium rare - see cooking notes here.
